Hello! I’ve missed you! I know I’ve been a little quiet here of late - I was trapped in that between Christmas & New Year blur of time where you don’t really know what day it is or which way is up. All you know is pudding is involved and lots of it.

I had the last two weeks off work (both my part-time gig and my business). It’s been a long time since I have done that as usually when I take time off from my part-time gig I take the time to work more on business. But this time it was a complete and total break from both and ahhhhh, I didn’t realise how much I needed that! It took me at least the first week to break out of do, do, do mode and step into holiday mode. My holidays have looked like:

  • sleepy, slow starts

  • no morning alarms

  • gym and/or walks most days

  • lot’s of leftovers

  • Summer swims and a little beach time (not much because the weather has been very stormy this storm season).

  • decluttering. Lot’s of decluttering.

Normally I would wake up on the first and be filled with new year energy and big plans. This year I took my time to make goals and really think about where I want this year to take me, both personally and in business. I’m just not in a rush this year.

So to honour my sleepy, slow starts I thought the perfect recipe to share with you would be my Slow Cooker Shakshuka. This is a delicious recipe for breakfast, brunch or lunch.

I’m going to test this recipe in the pan as well so you have both versions but for today I’m just sharing the slow cooker version.

Also, I know I missed sending a recipe out to you last week so next week I will be sending you two new recipes.
