You know I love a slow cooker meal. It’s the satisfaction of the setting and forgetting bit that I love. Knowing that dinner is already taken care of. Even though a lentil bolognese doesn’t really need to be a slow cooker meal as it can be cooked in about half an hour, I find that the flavour is so much richer when it slow cooks. Plus, even though it can be quick to make, dinner time is the time of day that I least feel like cooking, so knowing that it’s done is A+.
When I made this lentil bolognese for the first time, a long time ago (it’s been a go-to for a while), I didn’t tell my husband that there wasn’t any meat in it. When he was about half way through his bowl I asked him if he noticed anything different and he said no, it tasted just like it always does (thinking that my Lentil Bolognese was regular bolognese). After telling him that there was no meat and only lentils, he was shook. There is so much flavour in this dish that you just don’t notice not having meat.

Apart from being super tasty, some other bonuses about this dish are:
it freezes exceptionally well.
there is enough for two nights worth of dinner for my family (which includes 3 moderate eaters and 2 light eaters).
it’s absolutely loaded with vegetables!
