Baking was my first love. I loved making cupcakes with beautifully (well I thought anyway) and elaborately decorated tops, brownies and cake, oh so much cake. The first thing I ever learnt to bake was chocolate chip cookies, which I have made so many times in my life that I know the recipe by heart, even now after not having baked that particular recipe in about 15 years. I could still whip up a batch with confidence. The reason I don’t bake those particular CCC’s anymore is because I bake all gluten free these days, to assist my digestively challenged self in being able to enjoy my baked goods.

Which brings me to this cake, it’s both gluten free and dairy free (made using olive oil instead of butter, which is dreamy). Oh, and give me anything with soft, tender baked apples and I’m anyones gal. Just kidding, but seriously there is something so homely and comforting about caramelised baked apples. Pair them with a soft yet dense cake with hints of rose & cardamom, oh my!

You can eat this just how it is, delicious! Or top with a dollop of cream or vanilla ice cream. *sigh
