Just as I was getting into the swing of the new year I was hit with a not-so-fun chest infection. I think the universe was just saying “No” to January. Normally I would let those kind of set-backs get under my skin because I’ve got “goals” and “stuff to do” but this time I just went with it. Maybe it’s personal growth, maybe it’s my brain turning to jelly after managing with 3 kids at home for a looooong 8 weeks. Either way, I’m glad it’s February and I’m starting to feel better.
Enough moaning though because I have some recommendations for you!
Currently reading: The Secret Diary of Hendrik Green 83 1/4 Years Old. This book was handed down to my Dad from my Opa and now to me. It’s the personal diary of Hendrick, an elderly gentleman living in a retirement village, detailing all of the escapades he and his friends get up to. It’s a really lovely look into the life of an elderly person. An easy read that I’m really enjoying so far!
Currently watching: Love on the Spectrum. I’ve been watching this show with my girls and we’re all absolutely loving it! Being able to see some of the experiences of a person living with Autism is incredibly informative and is a beautiful way of promoting diversity and inclusion.

Peanut Butter Chocolate Overnight Oats
If you’re a chocolate fanatic then you’re going to love these, because who doesn’t like chocolate for breakfast? I have actually used almond butter in these, which works really well. We are strictly a peanut free house because my youngest daughter is anaphylactic. But if that’s not something you have to worry about then use peanut butter so I can live vicariously through you ok? Thanks!

Easy Mediterranean Baked Barramundi
This is hands down my favourite way to prepare barramundi. It is melt-in-your-mouth tender and so full of flavour. Plus it’s really quick and easy to make, which is always a big win!
I’m also making my Nut Free Chocolate Bliss Balls, because they are a perfect healthy little snack for the school lunchboxes.
