Have you tried involtini before? It comes in many different forms and is made from a thin outer layer wrapped around some kind of filling. In this case I have used thin slices of zucchini, wrapped around a filling of goat’s cheese, spinach and herbs.
The delicious little bundles are then nestled in a saucepan of a beautiful tomato sauce, topped with parmesan and baked until the tops are just turning golden. My favourite way to enjoy this dish is with a crusty loaf of bread cut into slices and dipped in. Or spooned over your favourite gluten free bread, toasted and buttered.
